Nice choice!!!
I (and several others on this forum) have used the DaVinci cable
splitters to quickly switch between bar setups. It will require
dedicating brakes and shifters to each bar setup, and you will need to
purchase the necessary splitters and extra cables to configure it
properly
I'm going through a similar process. My Bombadil has a bullmoose bar
setup, and I am piecing together the drop bar setup. I tried the dirt
drop and it was too high and not enough horizontal reach for road
riding. I then mapped out all my bikes on drafting paper using the
frame drawing tutorial t
You will need a shorter stem with the m-bars than with drops, so what
I do is have an appropriate stem, bars, and levers taped up and ready
to switch. Just undo the brake cables, switch stem set-ups, connect
the cables and you're ready to go.

going to end up with a sweet setup.
As far as stems go, I have a Nitto dirt-drop 100mm on mine, which
gives a horizontal extension/reach equivalent to about an 8
