I (and several others on this forum) have used the DaVinci cable splitters to quickly switch between bar setups. It will require dedicating brakes and shifters to each bar setup, and you will need to purchase the necessary splitters and extra cables to configure it properly, but once set up properly, it's REALLY NICE. Tonight, for example, I intend to swap back to drops on my Bomba. I don't have to set aside all evening for this... Just 10 minutes at a leisurely pace, or 4 minutes and 21 seconds at a record-setting pace (which I'm proud to say I hold that record, which appears on my YouTube vid)... How cool is that? If you are using canti brakes, you will likely need the DaVinci brake cable splitters, although some may have a remedy for disconnecting the brake cable at the canti yoke. If you are using V-brakes like me, you can order extra brake noodles and simply disconnect at the brake unit. It DOES require some planning, additional $ and a little patience, but if this is what you seek, than this you shall have. Your comment about going with 700 x 80 tires... I trust you mean 50mm tires (which are 2 inches wide)? That's what I run on my Bomba. If so, I'm also guessing that you'll need 65mm fenders like the Planet Bike Cascadia 29er fenders. Anything narrower will be a tight fit. Or if you meant 60mm tires on the Bomba (like the super wide Big Apples), I am reasonably sure you won't get fenders to fit well over these tires...
