I have a pair of Marathon Almotions in 700x55 (tubeless set up mind you)
and I think they roll very nicely at about 800 grams a piece. I hate flats
and have frankly been pretty blessed with how few I've had in my LIFE.
Hopefully a tubeless marathon is the perfect combo for never flatting.

They ain't sexy but if you dial in your air pressure, the value is pretty
darn good, and I've enjoyed many rides on them. Grip is great on wet roads,
in my experience.
Like Ian notes, the Almotion looks interesting as well, which is what I'll
be trying next since the Supremes were discontinued
Being a Susie owner, AND being familiar with Idaho rough-stuff bikepacking
conditions*, AND considering your size, I'd suggest focussing your search
toward finding a Gus Boots-Willsen. It will hold up better.

The bosses/cages are mounted low on the tubes so you can remove the bottles.
If the cages were higher up on the tubes, you couldn’t get your bottle in and
