in the hardware. Pulseaudio
on the host CPU side uses 2 different profiles: modem + normal audio.
By switching between profiles, the hardware is configured on the fly to
output the right audio to the speakers.

VoLTE is configurable sometimes but highly depends on the modem how you can do
that. High chances you can disable it with custom AT commands from the vendor.
QMI support for IMS/VoLTE is not supported yet in ModemManager.
