relevant information : if my emails are deleted from the server (when I
retire for example), how can I save all my mailboxes/emails locally (or
on a server) in a searchable form, that would include the attachments?

Hello,
You could copy/move them to another (IMAP) server or look at archiving
solutions like EagleFiler or DEVONthink.

I use EagleFiler (https://c-command.com/eaglefiler/) for this, along
with the EagleFiler MM bundle.
I had noted some ideas on how to potentially customize the bundle to
better handle tagged emails, but haven't had the time to try to
implement them.

assuming they have a free trial version. Given the (very) high number of
mails I have to keep, the efficiency of the Find function will be
critical, as well as, if possible, the support of the hierarchical
organisation of the mail
