It should be possible to keep the current version you have. When you get the
prompt to upgrade just hit cancel and continue to use the version you are
already using.

If IOS had the problems that some are reporting in mail I would be in bad
shape because I do get my state work email on my iPhone. I almost like that
better than Outlook 2010.

The iTunes upgrade is a separate upgrade from the lion upgrade.

In all the Lion excitement, people may have missed the updates to ITunes and
IWork that came out today. Both applications can now be run full screen if you
have Lion. No clue what bugs might have been fixed.
