You can do a three finger quadrupal tap to copy what VO just last said. For
selected text I think there’s a copy option in the edit roter.

Yes you can do this.
1. Use the iOS roter and navigate to "Text Selection"
2. Swipe down and you will hear a number of options related to selecting text.
I just chose Select all and the text of the email minus the signature was
selected.
3. Now roter to "Edit" and choose "Copy".
I want to copy the text in an email on my phone and paste it somewhere else. is
there a way to do this? I understand how to paste it. what I’m asking about is
how to select and copy text.

With the email message open in the Mail app on your iPhone, do the following:
Set the Rotor to Text Selection, then flick up or down to Select All, then
perform a one-finger double tap
The contents of the email message should now be copied to the iPhone’s
clipboard.
