There are 2 ways of doing this. The first is the easier way.
1. Use classic view in Mail. Your list of messages will be in a table. Interact
with the table and move to the subject column. As you move up or down the
table, only the subject is read. This may be enough for you.But if you do want

I've never found a way to accomplish this. They can be sorted by subject, but
the from line is still read first.
