There are 2 ways of doing this. The first is the easier way.
1. Use classic view in Mail. Your list of messages will be in a table. Interact 
with the table and move to the subject column. As you move up or down the 
table, only the subject is read. This may be enough for you.But if you do want 
the subject column moved, here is how I did it.
2. There may be other ways of organizing columns.But I was able to do this very 
easily with no problems. This is assuming you have at least Mountain Lion, 
10.8. Go to the column header section by pressing VO-Shift-Backslash. When you 
are in the column header,you would move left or right to the various columns. 
Go to the column you want to move. Press VO-Comma to select the item for drag 
and drop. Next, go to the column to the right of where you want your column 
moved to. For example, if you want the subject column to the left of the from 
column, go to the from column. Last, press VO-Shift-Comma to place the drag 
item to the left of your VoiceOver focus.

I was able to place the subject column to the left of the from column with very 
little problems.
No sighted help needed.
