Is it possible to break between systems other than at a bar line. Hymn
books tend to split the systems between lines of the music rather than
bar lines.

No. You can create an invisible bar line; see the docs.

ah, I think I see: what about the quotes? they may have to be removed
from the command, similar too the ps->pdf com

I'm uploading 2.5.31-4 for MacOS X. This release has a kludge for the
problem that LilyPond spends a long time analysing /System/Library/Fonts
(something which looks like as if it is hanging).

What do you mean by "note spacing"? The manual shows you how to
adjust the overall horizontal spacing and how to create invisible
(or hidden) notes.
