I don't know about running it from a MAC ?? But... I've run our koha install for an elementary library ( http://koha.almaschools.net/) as a VM off an ESXi box for two/three years now...no issues at all, very low usage. VM is a Debian install w/512 meg RAM allocated. :-) runs like a champ.

We have an instance of Koha running on VMWare. OS is Ubuntu. It is a test system and is used to discover quirks, tweaks, and problems with Koha. We are planning to go live to support Discovery platforms with the OAI-PMH database. Still grappling with issues with the OAI datasets. Steve sow.
