Kevin and I have come up with two different solutions for this bug:
implementing it as a plugin and in GTG core.
You can try the core implementation at lp:~gtg-user/gtg/gmail-like-ui, which
adds an option in the "view" menu.
The plugin implementation is available at
lp:~gtg-user/gtg/customizatio
Why not allow the "starting on" and "due by" fields to select tasks as
well as dates?
E.g. "starting on" a task means that this task is a follow on task from
the one selected in the "starting on" field (and thus should not appear
in the work view until that task is complete).

that is not the expected behavior.

wrong dependencies check.
In fact, the dbus word is split into ['d','b','u','s'] that is not the excepted
behavior. You can see it by launching the Plugin preferences UI.

Checking DISPLAY is insufficient (I tried).

Neither gtk nor pygtk throws an exception in this case, so can't solve
it that way.
Fortunately I found a simple solution, to just try running xset and
check the error on that.

I'm actually amazed the gtk main loop doesn't exit with an exception
if there's no available display... I don't quite know ho
How to detect if X is unavailable? an easy way is look at the environment
variables (which would make this a bug marked "love"), but having DISPLAY set
does not mean that X is really running.
But then, are we going to care if someone is so evil to set DISPLAY manually?
