Before typing any such number you can use apostrophe ( ' ). This will solve
your problem.

But the problem will be that it will always convert to text. And date
functions will not work. The only way to work will be changing the format of
1000's of cells. You can select all cells in which data is there and in
which you want to put data together and just once you will need to change

a solution to your problem is to precede the numeric string with a single
quote ' . For example '6-2 will show the text sting 6-2 while 6-2 (without
the single quote) gives 1-Jun. Not very elegant but it seems to work.
