I like the flex app idea. The question is what do we have in the way of server
side to handle dynamic data requests and how are we going to store the data

There's at least one there I know that's not using Apache Flex - hopefully
being there will be incentive to upgrade.

Not without a lot of work. We would need permission from those folks in
that showcase and permission from Adobe. Plus, we want the Apache Flex
showcase to showcase applications that have moved to Apache Flex.
