Despite the printer is able to print in grayscale, the PPD provided by
Canon doesn't offer this option.
You have to use the proprietary tool "printuiip4500" shipped with the
manufacturer's package to set global preferences for the printer.

I have the same problem with evince that does not allow to print in B&W or
grayscale.
It is not a problem of printer driver nor cups configuration (for example,
grayscale printing from Open Office or Firefox works fine ; you just have to
choose your printing parameters in the "File/Print/Propert
I'm using Gutsy 7.10 on i686 w/ evince 2.20.1-0ubuntu1.
Sorry but I'm not able to find any B&W option in all dialogs reachable
from "File/Print Setup..." or "File/Print...". Or maybe did you mean
that *when the option is implemented* it should go where you said? In
that case forget this paragrap
