I have the same problem with evince that does not allow to print in B&W or grayscale. It is not a problem of printer driver nor cups configuration (for example, grayscale printing from Open Office or Firefox works fine ; you just have to choose your printing parameters in the "File/Print/Properties" dialog box). Evince does not offer any choice in its printing dialog box.
