The audio device is /dev/dsp, but in order to make recordings, you'll need
software such as sox (which provides programs rec and play), and you may
need to u

easier, and safer too, since it leaves your virtual terminals untouched.

I believe this machine is a nubus Mac, which isn't supported by the
standard linux kernel, only by the older mklinux kernel. You could
probably manage to use debian together with the mklinux kernel, but I doubt
it would be easy.
