I think you're tracing the wrong codepath. (And I'm not really surprised that
you get NULL pointers, as I doubt any applications actually has Categories=Bar)
If I'm not mistaken, the code responsible for displaying icons on the desktop in
the illume window is _apps_populate, in illume/e_

FSO packages are exactly the same packages as Albin prepared for
experimental, and that are in NEW already for a month.
The only differennce is ~fr.1 suffix at version strings.
