I use pretty much any affordable synthetic grease I can get... and for oil, just synthetic motor oil. It's important to stick with the synthetics from what I've been told...as far as what brand, I don't believe it's terribly important...I buy mine at hardware and automotive stores.
I've used the Lewmar grease and oil for years with no issues.

You could look at Castrol Braycote 601. It is a perflouoronated grease
taht we used in missile controls. It is basically an inert grease that
should be compatible with the plastics. Only downside is that it is
about a $100 an ounce.

I found this online which agrees with what Harken says. What it does not say is
what to use instead of grease on those plastic rollers. It also says not to
use 3in1 oil on the pawls which is what I have used in the past. Dave

I have brought all my winches home and cleaned them and getting set to regrease
them. Most of the larger bearings are cylindrical units with plastic rollers.
I bought some Harken winch grease today and it specifically says it is not
intended for plastic rollers and to use an oil instead. The

Mine doesn't have the internal switch but I wired it to ONLY the AC
receptacles via a rotary switch and the receptacles breaker. I did the
same with a friend's boat.
That is, the switch is between the breaker panel supply buss and the line
side of the AC receptacle breaker. The high amp AC users
