The simplest thing, if you can locate one, is to find a WD1000/WD1001
controller board and hook it to a PC. Chances are overwhelming that it
was used to write the SA100x in the first place.

I believe Dave G's MFM emulator has an option to support the SA1000.
I have one in stock for a future project to try to extract data from
SA-1000's in DSD floppy / 8" drive subsystems.
