I read once that scientists opened up cans of meat from the 1860's and
determined that it was still safe to eat. Due to the ethical rules they
operate under they fed it to rats rather than humans. The rats had no
comment on the flavor, but they ate the meat and didn't die.

I have read more than one post-apocalypse book where someone uncovers a
200-year-old can of (whatever) that is as good as new. Vienna sausage
might have an advantage because of the nitrates.
