RH has pop3 on it already.
Edit
/etc/xinet.d/ipop3

disbale=yes  --->  disable=no

Then run

service xinetd restart

and

telnet localhost 110
to check it.

I can't remember any exploits for pop3, I'm sure if you register your machine 
with rhn.redhat.com and pay attention to it, you should be ok for security.

Also, you may want to investigate
/etc/xinet.d/pop3s
As passwords are passed in plain text over the internet with 
/etc/xinet.d/ipop3


Sendmail on the other hand you may want to pay close attention to.  People may 
be able to use your machine to send spam.
