Just to add my two cents, I am running an email server at my daughters school with a dynamic IP (cable modem). I use DNS2GO (www.dns2go.com) to do the dynamic mapping. The school has a domain name which is hosted by XO communications. (schoolname.org) The MX record at XO is set to the DNS2GO name (schoolname.dns2go.com) instead of an ip address. All mail addressed to @schoolname.org is directed to schoolname.dns2go.com which points to the cable modem connected server which is running sendmail. I have had no problems in the 2.5 years it has been running.
