MACARONI AND CHEESE CASSEROLE 
3 tbs. butter 
3 tbs. flour 
2 c.  milk warmed 
1 1/2 lbs. elbow macaroni- cooked 
1 lb. sharp cheddar cheese  grated 
1 lb. monterey jack cheese grated 
In small sauce pan, melt  butter. Add flour and whisk together to create a 
roux. Add milk and whisk  until smooth and slightly thickened. When 
thickened, 
add 3/4's of each  cheese and mix to combine. Pour cheese over macaroni. 
Mix 
well and place in  lge. casserole dish and top with remaining cheese. Bake 
at 350 degrees for  20 minutes.
