Dirty Rice with Sausage and  Shrimp
(Serves 6)
 
1 tbsp. vegetable oil
1 onion, diced
2  cloves garlic minced
1 c. diced kielbasa sausage, or your  favorite spicy sausage (1/4 inch dice)
1 lb.lean ground pork or  chicken
2 ribs celery, finely diced
1/2 green pepper, diced
1/2 red pepper, diced
1/4 tsp.cayenne pepper
3/4 tsp. dried oregano
*1- 1/4 c.long-grain or parboiled white  rice
2- 1/4 cups chicken stock
6 large (or 12 medium) shrimp, peeled and  deveined
Salt and pepper to taste
4 green onions, sliced  thinly
2 tbsp. finely chopped  parsley
 
 In a large skillet or wok, heat the  vegetable oil over medium-high heat.
Cook the onion until soft and light  golden.
Add the garlic and kielbasa and cook  until the sausage is starting to
Brown.
Add the ground meat and cook, stirring  constantly until the meat is no
Longer pink.
Add the celery, green pepper, red pepper,  cayenne pepper, oregano, rice
And chicken broth. Bring to a simmer.  Reduce the heat to low. Cover and 
cook
For about 12 minutes.
 
When the rice is almost cooked, add the  shrimp. Cover again and cook for
About 4 -5 minutes or until the shrimp  are cooked through and the rice is
Completely cooked.
Season with salt and pepper to taste.  Stir in the green onions and
Parsley.
Serve immediately.
 
* parboiled rice will keep it's shape  better
