Beef Chow Mein

4 t. cornstarch
1 t. sugar
4 t. soy sauce
1  garlic clove, minced
1/2 pound beef tenderloin, cut into thin strips
1 T.  vegetable oil
2 cups uncooked vegetables, carrots, green pepper, broccoli,  celery, 
cauliflower and/or green onions
1/3 cup beef broth
Chow mein  noodles or hot cooked rice

In a bowl, mix the cornstarch, sugar, soy  sauce and garlic. Add beef and 
toss to coat. In large skillet or wok, stir fry  the beef in oil until no 
longer pink; remove and keep warm. Reduce heat to  medium. Add vegetables and 
broth; stir fry for 4 minutes. Return beef to the  pan; cook and stir for 2 
minutes or until heated through. Serve over chow mein  noodles or rice. 
Serves 2
