ZUCCHINI  BREAD

Makes 2 loaves (about 20 servings)
2 cups grated zucchini
3  cups flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking  powder
1 tablespoon cinnamon
1 teaspoon ground allspice
1/2 teaspoon  ground cloves
3 eggs
1 cup vegetable oil
2 cups sugar
2 teaspoons  vanilla
Chopped nuts (optional)

Place zucchini in a colander. Press  out as much liquid as possible.

Preheat oven to 325 degrees. Grease and  lightly flour two standard loaf 
pans.

In a large bowl, sift flour,  salt, soda, baking powder and spices.

Beat eggs. Add oil, sugar, zucchini  and vanilla. Beat well. Beat in dry 
ingredients. Add nuts, if  desired.

Divide batter between prepared pans. Bake until a toothpick  inserted in 
the 
center comes out clean, about 1 hour. Cool loaves in pan 25  minutes. Turn 
loaves out onto racks to cool  completely.
