Peach Upside-Down Cake

 
1/3 cup butter, melted
1/2 cup packed brown sugar
2 cups sliced fresh peeled peaches
1/3 cup shortening
1 cup sugar
1 egg
1/2 tsp lemon juice
1/2 tsp vanilla
1 1/3 cups flour
2 tsp baking powder
1/2 tsp salt
2/3 cup milk
Whipped cream, optional
 
Pour the butter into an ungreased 9 inch square baking pan.   Sprinkle with 
the brown sugar.  Arrange the peach slices in a single  layer over the 
brown sugar.  In a small bowl, cream the shortening and  the sugar until light 
and fluffy.  Beat in the egg.  Beat in the  lemon juice and vanilla.  Combine 
the flour, baking powder, and  salt.  Add to the creamed mixture 
alternately with the milk.  Beat  well after each addition.  Spoon over the 
peaches.  
Bake at 350 F  for 45-50 minutes or until a toothpick inserted near the 
center comes out  clean.  Cool for 10 minutes before inverting onto a serving 
plate.   Serve warm with whipped cream if desired.  Makes 6 servings
