RHUBARB PUDDING
Mix and put in a baking dish:
2 c. sugar
1/3 c. pancake mix
4 c. chopped rhubarb
Mix and pour over rhubarb:
3/4 c. pancake mix
2/3 c. sugar
1/4 c. melted shortening
1 egg, beaten
Bake 375 oven for 20 or 25 minutes or until brown.
(Bisquick may be used in the place of pancake mix.)  Enjoy.
