Baked Italian Chicken

4 boneless skinless chicken breast halves
1/4 cup olive oil
1 cup  fine breadcrumbs
1/2 cup Italian salad dressing
2 cups marinara  sauce
1/2 cup sliced Mozzarella cheese
1/3 cup chopped tomatoes
1-1/2  teaspoons dried Italian seasoning
Parmesan cheese

Marina Sauce:
1 large white onion chopped fine
1 carrot  grated
1/2 cup butter
5 ripe tomatoes quartered
1/4 cup chopped fresh  basil
1 teaspoon salt
1 teaspoon freshly ground black pepper
1-1/2  teaspoons sugar
2 cups chicken stock

Preheat oven to 350 then heat olive oil in large frying pan.
Dip  chicken in salad dressing then in bread crumbs and brown in oil.
Sauté onions  and carrots in butter then stir in tomatoes, basil, salt, 
pepper and  sugar.
Cover and simmer 15 minutes then puree in blender 
Transfer chicken  to shallow baking dish then spoon marina sauce over top.
Top with sliced  mozzarella then chopped tomatoes.
Sprinkle with herbs and a generous shake of  parmesan cheese then bake 45 
minutes.
