Okra Etouffee  
 
2 Pounds Okra -- sliced 
1/4 Cup Olive Oil 
Salt And Pepper -- to taste 
1 Large Onion -- chopped 
1 Medium Bell Pepper -- chopped 
2 Cloves Garlic -- chopped 
1 Pound Smoked Sausage -- sliced 
2 Large Tomatoes -- chopped 
1 Teaspoon Cayenne 
1 1/4 Cups Water 
Rice -- cooked 
 
Saute okra in oil about 20 minutes. salt lightly, and then add: onion,  
pepper and garlic. Saute until onion is soft. Add sausage, tomatoes, cayenne 
and  pepper. Saute until sausage is browning. Stir in water and simmer 30 
minutes.  Serve over rice.
