QUICK CAJUN PORK AND PECAN STIR FRY 
This recipe came from Monroe Estate  in Stephenville, Texas in 1982. 
1 pound pork stir fry strips
1-1/2  tablespoons Cajun seasoning
1 tablespoons vegetable oil
3/4 cup chopped  celery
1/2 cup chopped onion
1 clove garlic crushed
1 green bell pepper  seeded and chopped
3 cups hot cooked rice

Cajun Seasoning:
3 tablespoons paprika
2 tablespoons salt
2  tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion  powder
1 tablespoon cayenne powder
1 tablespoon oregano
1 tablespoon  thyme

In medium bowl toss together pork strips with Cajun seasoning to coat  evenly.
In large nonstick skillet heat oil over high heat then stir fry pork  for 6 
minutes.
Add celery, onion and garlic to skillet and cook stirring  often for 4 
minutes.

To make Cajun seasoning combine all ingredients until well  combined.
Store any left over seasoning in an airtight  jar.
