GERMAN APPLE CAKE
5 baking or cooking apples
2 tsp. ground cinnamon
2 1/2 c. sugar
4 eggs
2 tsp. vanilla
1 1/2 tsp. baking soda
1 1/2 c. confectioners' sugar
1 1/2 tsp. vanilla
5 tbsp. sugar
3 c. all-purpose flour
1/2 tsp. salt
1 c. vegetable oil
1/3 c. orange juice
1 1/2 tsp. baking powder
2 tbsp. soft butter
1-2 tbsp. water
1. Grease and flour a 10 inch tube or Bundt pan. Preheat oven to 350 degrees.
2. Peel apples, core and thinly sliced. In bowl, toss apple slices with 
tablespoons
of sugar and teaspoons of cinnamon; set aside.
3. In large bowl, mix together flour, sugar, salt, eggs, oil, vanilla, orange 
juice,
baking soda, and baking powder.
4. With electric mixer, blend together on low speed for 1 minute.
5. Clean down side of bowl. Increase speed to medium and blend for 3 minutes. 
This
is a very thick dough.
6. Fill prepared pan with alternating layers of batter and apples, making a 
total
of 3 batter levels and 2 apple layers. Start and finish with batter.
7. Bake for 1 1/2 to 1 3/4 hours or until cake tester inserted in center comes 
out
clean.
8. Cool on rack 10 minutes, then invert cake, remove pan. Allow cake to cool 
completely
on rack.
9. Make glaze. Mix confectioners' sugar, butter, vanilla, and water until 
smooth.
Drizzle on cooled cake. Serve with ice cream or whipped cream.  Enjoy.
