I love this time of the year. If I grill I will throw on an extra chicken breast, corn on the cob whatever I am doing just so I have left overs to throw in a salad the next day. Just add some fresh fruit, like cherries, mushrooms, the grilled meat and your greens along with tomatoes, if you have them, and your favorite dressing. Take the leftover grilled corn add some tomatoes, onion, peppers and lime juice and olive oil to make a salsa to serve with chips. (This is even better if you smoke the veggies for 15 minutes before making the salsa.) There are no measurements just make it how you like - thick or thin, spicy or mild. Use whatever fruit is in season that goes with your meat or you have on hand. Fast and easy plus good for you. Finally getting lettuce from the garden but dying for the tomatoes and other veggies to start producing for even better salads (cheaper ones too). Sue - Toledo
