I think you've already got this wired about as well as can be.  Letting her 
set the pace, pick the spots, etc.  That's absolutely key with kids, and 
you've already figured that out.  The rest of us can learn from your 
experience.  

FWIW, my eldest daughter (age 28) lives in the midwest.  On a whim, my wife 
went to visit her this week.  A few minutes ago, I got a phone call 
reporting that they'd done a 41 mile ride in the Indianapolis area, based 
on a book that she had of Indiana tours.  Neither has ever planned a bike 
ride, but they've both been with me innumerable times.  The moral of the 
story is: raise 'em right & they'll become self-sufficient.  Fast forward 
10-15 years & your daughter may be planning her own trips, & if you're 
lucky, she'll invite you along.  

You two will have a wonderful trip.
