Right, no grips until the stem and cockpit are finalized works for me. If bare 
bars bother you, uses h-bar tape laying around can be put on or off in minutes. 
Wrap it from the brake levers back to the bar ends and finish with electrical 
tape. This way, pressure from palms pushing forward goes with the grain of 
wrapped tape.
The glue thing has sworn me off cork and other such grips. I use tape or the 
grips that that clamp on with bolts at the ends. Not as elegant, I know, but 
for me, there is no such thing as a final cockpit. I'm going to be changing 
something sooner or later and it's going to involve dealing with nasty, glued 
grips. Pass.
