Justin, Marathon Supremes would be my personal rec. after trying them on my SimpleOne. The 42-622/700x40C model left room for fenders when mounted on Open Pros - though I never did install fenders with them. They're 495g each, but designed to be as little tank-y as a Schwalbe tire that will last forever can be.
I'm on Jack Brown Greens day to day, and there is absolutely nothing to complain about, but if you like cush, they might not get you all the way there. This is an old saw for me, but I think there is a gap in the tire market right now where a light, fat, and cheap(ish) 622mm/700C slick road tire should be. My 650B life tells me there is a different balance that the various designers and manufacturers can strike in 622mm/700C along those three dimensions, accepting the tire isn't going to last forever or be flat proof. Some people say Schwalbe Kojacks fill that gap, so you may want to check them out, but they only go up to 35mm. Good luck. Changing tires is fun.
