Another consideration is where the savings on the lower priced options 
derive.  

Traditional leather tanning uses organic compounds that used properly do 
not pollute the environment or harm the people tanning the leather. 
 Organic compounds cost more to obtain.  Implementation is more labor 
intensive and takes more time.

Modern chemicals and methods are available.  Most likely the leather in 
less expensive saddles come from modern factories.  Leather tanning 
factories in China (source of almost all lower cost leather tanning) are 
notorious for the pollution they spew in a country where pollution is 
generally accepted.  Who knows about the long term health of the workers.
