My 559 "go-fast" set up is with 28mm Conti Ultra-Gatorskins at 85 psi. "sporty" set up is Tim's Paselas at 75 psi. 65 psi makes these quite comfy, but slower. 37 mm Paselas are plusher, but can be pumped up make them a bit quicker if need be.
Tim mentions training for speed too.
