I'd second much of what Joe Bartoe said above, both in terms of crankset/cassette choice and Campy components. As for tires, I concur on the Challenge Parigi-Roubaix also mentioned above; I love them too.
But I'd add a heretical tire option to the mix for your consideration: Gommitalia Calypso-K in 700x23. Yes, 23 mm. They come with traditional tan sidewalls, as well as black. I wouldn't be surprised if they're made in the same factory as the Challenge; the casing seems quite similar. I just started riding them on my "go-fast" and they are fantastic tires! I find them beautifully grippy, fast-rolling, and smooth, even on fairly pock-marked streets. Indeed, despite their 23 mm width, I find them smoother than many other wider tires I've tried, including Continental Gatorskins in 25, Michelin ProRace in 25, Panaracer Stradius in 26, and, ahem, the Ruffy Tuffy in 27. I'm riding them at about 90 psi, despite the higher recommended range.
