Not to be a wet blanket but I did a conversion of an old road racing bike so I could use fatter tires. Many people who rode it liked it. I'm glad I tried it, but I never really liked it. As a result I got a Legolas which is a great road bike but will also take fatter 700 tires for my off road and mixed terrain rides. But as they say, YMMV, and you won't know until you try it.
