If you have any kind of "Recyclery" or similar used parts shop in your area,
there should be a plethora of canti-compatible levers. With the introduction
of v-brakes back in the mid-ninties, there was the constant sound of mtb
canti levers hitting shop floors all over the country as folks flocked to
"upgrade".

The only ones which can be problematic are the "Servo-wave" levers which
used a camming system to increase pull as you squeezed the levers. They can
be a little overwhelming. There weren't a lot of bad brake levers for
canti's, and it's mostly a size and feel thing. XT's were superb, but it's
hard to go too wrong.

As has been pointed out, you want to make sure you are not using XT's for
linear pull brakes.

"Direct-pull brake levers used with any other type of brakes will feel nice
and solid when you squeeze them, but due to their lower mechanical advantage
you'll need to squeeze twice as hard to stop as you should, so unless you
are a lightweight rider with gorilla-like paws, this combination isn't safe
either."
