As for DTs - I learned to ride with DTs in the 80s.  Except for two
single speeds and a very short stint with a custom Rohloff, every bike
I have ridden since has DTs.  It becomes second nature.

Bar ends work.  If they are what brought you to the dance and you are
happy with them, I see no reason to struggle with something you don't
like.  That said, those two extra cables coming off the bottom of the
drops will mess with what is a serenely simple vision of a bike.
