I think Rivendell and Grant are actually pretty forward about raising the 
seat to the proper height. My first time at Rivendell Grant spent 15 
minutes helping me get a proper height on my Mercian, raising it 2-3 
centimeters. So not so much a Racer thing as just a fact of riding bikes, 
you can't ride comfortably and still put your foot down toooo easily. Low 
bottom brackets help a bunch with this though. I absolutely recommend you 
keep the proper leg extension and just hop off the saddle when you need to 
put a foot down, or find a curb. I think if you lower it you will be 
sacrificing ride comfort in exchange for stop comfort.
