I get the best of both worlds on about half my bikes by using a threadless stem and stem riser. The stem is threadless and has a removable faceplate so I can swap the stem without stripping the bars. It's attached to a riser that's essentially a threaded quill stem without the extension. A link to Velo-Orange's option is below, but others make them as well (Soma is the other one I use when I need one that's longer than VO's). It's not as elegant as a classic quill stem, but oh man, the added convenience overwhelms that drawback for most bikes.
