I am currently using Snoqualmie Pass standard weight on my Sam with no fenders. Previously used Jack Browns with Honjo hammered fenders (tried brass and aluminum). Even ran it with 50mm Big Bens (needed Eno single speed eccentric rear hub to do it). I love the combination of fat and light with the Snoqualmie Pass. If Compass ever comes out with some 45s, they will be on the bike. My Sam is my "road racing" style bike or more accurately, my event bike at the moment. 10 mph can hardly be considered "racing".
