Single chainring drivetrains with multiple rear sprockets are famous for dropping chains. The original spaceframe Moulton, the AM-7, originally came only that way. I remember reading a posting by an owner who said his bike was "possessed by the Devil" on account of throwing the chain, as you say, on bouncy roads. They came up with this nifty chain keeper to prevent derailing:
