Sounds like you're going to end up with a fantastic build. About the CR720's, you made and excellent choice IMO. here is a picture of how high I have my straddle hanger set up on my QB. As you can see it's pretty high. But it seems to provide the greatest mechanical advantage in that position, and the brakes feel *far* better than my low-profile ones:
