Having had an Atlantis since '03, and never ridden a Hunq, I'm biased toward the Atlantis. I'm also an 84mm PBH, and have 2 old Atlantis flyers that show the 56 & 58 overlap in that area. Mine is a 58 and came with 35 mm tires. However, over time my preferred tire width has grown, and 40, maybe 45, seems about maximum comfortable size. Were I to do it today, I would go with the 56 but it's not a huge enough deal that I'm motivated to change. Of course you've mentioned SO is not an issue so this may be a moot point.
Regarding racks, I've used both Nitto & Tubus, and find that Tubus are quite a bit stiffer. OTH, Tubus look industrial while Nitto are really attractive.
