Not quite true, especially for friction shifting. Contrary to assertions here recently, spacing and sprocket thickness are different for 7 vs 8, and friction shifting is definitely easier in my experience with 7. Also, there are some fine ratios available without needing to customize in 7, including 13-30 and 13-34. Most of the available 8s begin with 11, which IMHO is entirely useless.
I did recently experiment with a SunRace 12-32 8 speed which I customized with a 1st position 13 into a very nice 13-32. Ratios were nice, but friction shifting wasn't quite as nice as with a 13-30 7 speed, in that the 7 provided better audible and tactile feedback on both up and down shifts in the top 3 or 4 sprockets.
Also, chain angularity was greater on the large chain ring and large rear sprocket with the 8 than the 7 -- not at all unexpected, since the large sprocket on the 7 is spaced farther to the outside of the bike. I felt much more comfortable using the large-large combination with the 7, and with the 7 speed 48 x 30 (on a 650B wheel) provides a very useful medium low gear, very handy for short distances avoiding a chain ring shift. The gear on the 8 speed was even a little nicer, and it was a bit frustrating having to avoid it -- something that wasn't helped by the fact that the standard packaged chain length was just a wee bit on the short side for the large-large, and for an experiment I wasn't willing to ruin a new chain for the sake of one or two links.
